o Chicken thighs 500 grams
o Spare ribs 750 grams
o Potatoes 1 kg. (instead of PomTayer)
o Onion 2x
o Spring onion 3x
o Tomato 3x
o Garlic 4 cloves
o Sunflower oil 2 tbsp.
o Black Pepper
o Sea salt
o Brown Sugar 2 tbsp.
o Lemon 2x
o Oranges 2x
o Chicken Stock cube 1x
o Chicken broth 300 ml.
o Bay leaf 3x
o Nutmeg 2 tsp.
o Suriname Pigment Powder 2 tbsp.
o Tomato puree 140 grams


o Wok (Wajang)
o Cutting knife
o Cutting board
o Table spoon
o Teaspoon
o Ladl
o Bowl 2x
o Oven tray 1x

1. Cut Spare ribs into strips (between the bones).
2. Add: ◻︎Sea Salt ◻︎Black Pepper ◻︎Pigment powder.
3. Stir well to combine. And set bowl aside.
4. Dice chicken possibly leaving bones on.

1. Squeeze oranges and lemons.
2. Peel, wash and grate the potatoes.
3. Rinse the grated potatoes fleetingly and squeeze out the liquid.
4. Add squeezed orange and lemon juice.
5. Add 2 tbsp. brown sugar and mix well.
6. Divide the potato mixture into 2 bowls.

1. Dice the Tomatoes.
2. Chop finely:◻︎Onions ◻︎Garlic ◻︎Onion springs.
3. Place everything orderly on the counter.

DISH *Let everything simmer during preparation.
1. Put the wok on medium-high heat.
2. Add Sunflower oil and bring to temperature.
3. Fry Chicken.
4. Add roast Meat. Stir gently.
5. Add Tomatoes.
6. Add Onions.
7. Add Garlic.
8. Add red Chillies.
9. Add Bay Leaf.
10. Add the Chicken Broth. Turn the heat to low.
11. Add Spring Onions.
12. Add Chicken Stock cube.
13. Simmer whole for 30 minutes. Stir occasionally.
14. Add Tomato puree.
15. Entire simmer for 15 minutes.
16. Add nutmeg. Stir gently. Turn off the heat.

1. Spread part 1 (potato mixture) on the bottom of the oven tray.
2. Spread the meat filling over the layer of part 1.
3. Spread part 2 (potato mixture) as a topic over the meat filling.
4. Place the filled oven tray in the oven for 1 hour.
POM ready.
